I finished my last final last night. The instant relief is something that I will miss once I graduate, as hard as school is that feeling of summer officially being here is unparalleled. I do indeed, have some explaining to do for the reason of being absent, I tend to go on sabbaticals without any warning. But, schools is my priority, as much as I wish this blog could have my 100% attention.
First: I have been paleo/gluten free for the duration of this school term (last 3 months). No real reason, just wanted to challenge myself. And the last thing I want is this blog to be a health blog, and I defiantly can’t handle the temptation of baking when I am avoiding grains and gluten. Reason two: school, enough said. Reason three: is pictured above, meet Paddington! My fluff and love, I got him at the end of May and am totally in love. He’s a medium f1b goldendoodle (for those who care about all that breed specifics), he will be 11 weeks on Sunday. Honestly, just staying on top of two jobs plus school is a lot, when I added a puppy I just couldn’t handle anything else. Including this blog. Witch is opposite of what it should be, this corner of the Internet is my lifeblood, where I come alive, my zone.
Funny how when a little mind space opens up you instantly remember what you really are about. As soon as I finished school I remembered who I really am. I don’t feel like myself when I am studying, probably because I am not studying anything I am passionate about. My passions are this blog in essence, cooking, photography, writing, beautiful things in general. Making beautiful things was put on the back burner during this last quarter –and that’s not acceptable. Summer is glimmering in front of me with possibilities that are bounding and endless. I cannot wait to remember who I am and what I really am about. Create, live, adventure, love, laugh, travel, experience. My freed mind is starting to plan for what’s ahead, the possibilities for the future –the possibilities for studying what I am passionate about.

Recipe note: I used whole wheat pastry flour, you could use cake flour, or all purpose.
Cake recipe adapted from How to Cook Everything
1 cup semi sweet chocolate
1/2 cup butter
3/4 cup sugar
2 eggs, separated
1 teaspoon vanilla
2 cups flour (see note)
1 1/2 teaspoon baking soda
3 tablespoons unsweetned coco powder
1/2 teaspoon salt
1 1/4 cup sour cream
a decent amount of peanut butter
Heat the oven 350. Line your cupcake pan with liners. Spoon 1 teaspoon of peanut butter into the bottom of each. (about 18)
Melt the chocolate over low heat. Cream the butter and sugar together in your mixer. Add the egg yolks and vanilla, and melted chocolate. Cream until fluffy and light. In another mixing bowl combine the flour, baking soda, salt, and coco. In three batches, add the flour mixture, alternating with the sour cream. Spoon batter into a separate bowl. Clean your mixer, and whip the egg whites into stiff peeks. Fold the egg whites into the batter. Spoon into the prepped muffin tin, filling about 3/4 full. Bake for 15 minutes, or until toothpick inserts and comes out clean. Let cool and frost with frosting recipe…
1/2 cup butter softened
1/4 cup whole milk
3 cups powdered sugar
1 teaspoon vanilla
1/4 cup unsweetned coco powder
a dash of salt
Whip the butter, vanilla, salt, coco powder, and 1 cup of powdered sugar together. Add the milk, whip to combine. Add the remaining sugar, whip until fluffy and spreadable.
