Lemon Blurberry Crumble Cake-2

I’ve been into cake. What a thing to be into. Thank God for cake. The dense crumb offered by a simple cake is sometime more satisfying then a complex French dessert. This was inspired by a coffee shop that was recently found to be walking distance to where I live. They serve a over almond extract infused crumble cake. But even in it’s impurities its so satisfying. I came up with this lemon bunt version, mostly because I needed to use some lemons, and I never use my bunt pan. Careful with this, bake it until you think it’s on the verge of burning. It’s so thick and dense it takes a while to cook though.

Lemon Blurberry Crumble Cake

Cake recipe slightly adapted from this recipe.

For the topping:

1/4 cup flour

1/4 cup oatmeal

1/2 cup brown sugar

1/4 cup cold butter

1 cup blueberries

Mix the flour, oatmeal, and sugar together. Use your hands to crush the butter into the flour mixture. Mix in the blueberries. Set aside until the cake is ready.

For the cake:

Cake:

2 3/4 cup flour

1 teaspoon baking powder

1 teaspoon salt

1 1/4 cup butter

3 cups sugar

1/3 olive oil

zest from 4 lemons

1/4 cup fresh lemon juice

1 teaspoon vanilla

6 eggs

1/2 cup cream

Heat the oven to 350. Grease and butter your bunt pan. In a bowl mix together the flour, baking powder, salt, set aside. Cream together the butter and sugar until fluffy (remember you can’t over cream butter and sugar, only under do it). Beat in the oil, zest, lemon, and vanilla. One at a time add the eggs until fully mixed.

Mix in the flour in four stages.

Whip the cream. Stir in a quarter of the whipped cream into the batter. Then fold in the rest. Pour into the prepped bunt pan, smooth out the top. Sprinkle the make blueberry crumble on the top. Bake for about 1 1/2 hours, until a toothpick comes out clean. This is the one tricky part about this cake, it bakes for way longer then you think. I think it may have been in the oven for closer to 2 hours, keep an eye on it. It’s a thick cake and hard to get cooked though.
