I just adapted this recipe for these power bars. I love being able to grab them when I’m running out the door in a late fury in the morning.
combine:
- 2 cups of oats
- 1 cup whole wheat flour
- 3/4 cup brown sugar
- 1/2 cup flax seeds
- 3/4 tsp cinnamon
- 3/4 tsp salt
- 1/2 cup blueberries
- 1/2 cup dried cranberries
- 1/2 cup dark chocolate chips
Stir in…
- 1/4 cup extra virgin olive oil
- 1/4 cup apple sauce
- 1/2 cup honey
- 1 egg
- 2 tsp vanilla
Stir well. Spray a 9 x 6 baking dish and pat mixture with a spatula. Bake for 30-35 minutes at 350 degrees until the edges are golden brown.
